Watermelon Wave

Servings: 4 ⟩⟩ Serving size:  8 oz. per serving


You Will Need

  • Broccoli – two heads,
    chopped into florets
  • 2 tablespoon olive oil
    ½ teaspoon salt
  • ¼ teaspoon pepper
  • Optional:
    Lemon wedges
    Grated parmesan cheese

What To Do

  • Cut the watermelon in half, scoop out chunks, and place into the blender.
  • Add lime juice to the blender.
  • Blend the fruit for 1-2 minutes until totally smooth. If you feel like the puree has too much pulp or too many seeds, you can press through a fine mesh strainer into another bowl.
  • Serve cold and store in the refrigerator for up to four days. May need to stir to combine again.
  • Optional:
    Top with sparkling water for some extra fizz!
