Sweet Potato Chili

Servings: 8 ⟩⟩ Serving size:  1 1/4 cup


You Will Need

  • 2 sweet potatoes, cubed
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 tbsp olive oil
  • 1 tablespoon of minced garlic
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 2 cans black beans
  • drained a n d rinsed
  • 1 14oz can diced tomatoes
  • 2 cups of vegetable broth

What To Do

  • Heat oil in heavy large saucepan. Add sweet potato, onion, and bell pepper, stirring often until
    they soften (~3-4 minutes). Add garlic and sauté for another 30 seconds.
  • Add all spices and sauté for another 1 minute.
  • Add broth to pan and make sure to scrap the bottom of the pan. Bring to a simmer. Cover and
    cook for 14-16 minutes to cook sweet potatoes on a soft simmer.
  • Add beans and tomatoes to mixture and cook another 10-15 minutes to slightly reduce.
  • Top with plain Greek yogurt, lime juice, cilantro, shredded cheese, green onions, or tortilla strips.
    Optional
    May cook in a slow cooker or multi-cooker for 7-8 hours on low or 3-4 hours on high.
