Sweet Potato Chili

You Will Need
- 2 sweet potatoes, cubed
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 1 tbsp olive oil
- 1 tablespoon of minced garlic
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 2 cans black beans
- drained a n d rinsed
- 1 14oz can diced tomatoes
- 2 cups of vegetable broth
What To Do
- Heat oil in heavy large saucepan. Add sweet potato, onion, and bell pepper, stirring often until
they soften (~3-4 minutes). Add garlic and sauté for another 30 seconds. - Add all spices and sauté for another 1 minute.
- Add broth to pan and make sure to scrap the bottom of the pan. Bring to a simmer. Cover and
cook for 14-16 minutes to cook sweet potatoes on a soft simmer. - Add beans and tomatoes to mixture and cook another 10-15 minutes to slightly reduce.
- Top with plain Greek yogurt, lime juice, cilantro, shredded cheese, green onions, or tortilla strips.
Optional
May cook in a slow cooker or multi-cooker for 7-8 hours on low or 3-4 hours on high.
