You Will Need

  • 1½ pounds ripe tomatoes,
  • chopped and seeded
  • 1 onion, finely chopped
  • 1 jalapeño pepper, ribs
    r e m o v e d
  • ⅓ cup lime juice
  • 1 teaspoon salt
  • ½ cup cilantro, finely
    chopped

What To Do

  • Finely chop all of the ingredients. Tomatoes should be seeded.
  • Combine onion, pepper, and tomatoes in a large bowl. Add lime juice, cilantro, and
    seasonings and stir to combine.
  • Let marinate for at least 30 minutes in the fridee before serving.

    Tip! – If you don’t like cilantro, fresh parsley can be substituted.
